Objective The aim of this course is to provide delegates with the knowledge and skills required to perform an internal audit of part of a Food Safety Management System (FSMS) based on the GB 17341:2009 standard and report on the effective implementation and maintenance of the management system in accordance with ISO 19011.
Content
  • General introduction.
  • Food safety management principles, vocabulary and GB 27341 requirements.
  • Document review and audit planning.
  • Process auditing and audit skills.
  • Writing NC reports and audit reporting; Audit follow up.
Assessment At least 80% attendance and complete all in-class exercises and assessments.
Target audience
  • Staff who are charged with the responsibility to develop, maintain and audit an HACCP management system.
  • Those who wish to explore career opportunities in management system auditing.
Prerequisite Students are expected to have the following prior knowledge:
  • Management System – Understand the Plan, Do, Check, Act (PDCA) cycle.
  • FSMS - Basic knowledge of the concepts of food safety management including prerequisite programmes and HACCP principles; understand commonly used food safety management terms and definitions; common examples of local food safety legislation and requirements.

Remark
  1. Local organizations sponsoring their employees to enroll in the above training course can apply for the "Training Incentive Scheme for International Management System Certification" if they meet the following criteria:
    • qualified applicants of the CPTTM certification subsidy scheme or
    • local organizations certified to specified ISO standards.
  2. The Training Incentive Application Form must be submitted together with the Course Enrollment Form.
  3. "Training Incentive Scheme for International Management System Certification" and "DSEJ's Continuing Education Development Program" cannot be used together
